I’m not sure what 2021 is going to bring, but one thing I am declaring right now:  2021 is the Year of the Salad in my household.  

My one and only goal this year is to eat a minimum of four salads a week.  This may be the most daunting goal I’ve ever set.  I hate salads.  H-A-T-E them.  My friends love them.   “They’re so healthy!”  they say.  “And delicious!”  Well, maybe they’re healthy.  Delicious?  Oh, ho-ho, I laugh.  I’ve had salads before.  They look pretty on the plate with all of their colors and interesting shapes.  But they have a critical deficit:  flavor.  I suppose there is a tasty salad out there that I have yet to meet.  I’m determined to find it this year if I have to die trying.

Why am I putting myself through this?

I have to eat better.  I lack the energy I once had, and, like so many others, I’ve gained the “COVID 10.”  I’m going to start with pre-packaged salads because they require the least amount of effort.  If I can establish new habits I hope to advance to more creative salads of my own design.  How long does it take to establish a habit?  Thirty days?  Oh my.

The salad pictured here is a pre-packaged number from the Walmart deli.  I have to say, for salads, they’re edible. (they’re not as good as, say, Sausage Egg McMuffins, but somewhat better than plain kale, which isn’t saying much).
